“Dad, why are you crying? “On March 31, Dominique Zucaro called his wife with tears in his eyes. After six attempts, this pizza maker obtained the title of champion of France.

“When I had my wife on the phone in FaceTime, she didn’t believe me,” laughs Dominique. If the emotion was strong for this young pizza maker, it is because of his unfailing investment in winning this distinction.

“A crazy bet”

When Dominique goes to Paris for this sixth and last participation in the French championships of the discipline, he knows that the competition is tough. Due to Covid-19, the pre-selections in all French cities have not been made and 150 pizzaioli are competing.

The opportunity for Dominique Zucaro to “try a crazy bet”. “I chose to make a vegetarian pizza,” he explains. The recipe is particularly original:

  • Velouté of zucchini with Espelette pepper,
  • caramelized apples,
  • Lamb’s lettuce,
  • Stracciatella,
  • Almonds,
  • Cauliflower,
  • A reduction of red wine to bind.

Dominique was crowned in the “classic quality pizza” category. “The queen category” according to him since it celebrates pizza at its most noble.

For the greediest among you, this pizza will soon be available in its restaurants. Dominique is now at the head of three catering outlets: the Ovalie restaurant, the Divino and the Dopio in Sassenage, all three. The chef simply waits for all the products to be in season.


Unconditional support from his parents

In 2015, Dominique Zucaro found himself unemployed. He then decides to make his dream come true by opening his pizza truck by investing all his savings. On March 15, 2015, the story was launched. The following year, he decided to take part in the French championships.

Born into a family of Italian origin, Dominique has been “immersed in pizza dough” since childhood. His mom and dad supported him throughout his adventure. An emotion all the stronger when he received his title. “I fought so hard to get here that I’m proud to succeed” explains Dominique before adding that “the story is even more beautiful because my father transmitted this passion to me”.

Dominique’s next goal is to participate in the world championships in Italy. A nice wink for anyone with roots in Puglia, southern Italy.
