On March 31, 2022, on the occasion of the Food and Hotel-Restaurant Trade Fair organized in Toulouse (Haute-Garonne), Antonio de Fabbio became Neapolitan pizza French champion.
A first for the head of The Traditiona pizzeria which opened in 2019 in the Chartrons district in Bordeaux (Gironde).
From Bordeaux beginnings to pizzeria Masaniello
It must be said that he had never participated in a trade show before. And he wasn’t even expected to participate in this one: it was a loyal customer who registered him without his knowledge!
“I learned it ten days before”, laughs the 30-year-old pizza maker, who settled in France in 2017, to work in another Bordeaux pizzeria: Masaniello.
To pull out of the game against the 35 competitors present in Toulouse, the Neapolitan was able to count on his mastery of the wood oven, which he uses daily in his pizzeria.
“I make pizzas in the great Neapolitan tradition. Hence the name of the restaurant,” explains the light-eyed bearded man.
Customers want to taste the margherita of the French champion
During the show, participants had to make a margherita (tomatoes, mozzarella, fresh basil, salt and olive oil) or a marinara (tomatoes, olive oil, oregano and garlic).
Antonio de Fabbio won the title preparing for the premiere. Since this success, customers have been flocking to his restaurant to taste it. “And also because it’s the cheapest (editor’s note: it is sold for 9 euros) à la carte”, smiles the pizza maker.
And in less than three months, from July 3 to 6, the French champion will represent France at the 2022 Olympiad in Naples, the equivalent of the world championship where 300 competitors are expected.
