Clément Di Leo, manager of the Colors Pizza truck, which has been offering delicious Neapolitan pizzas to the inhabitants of the Montbéliard country since the end of 2020 (in Montbéliard, Exincourt, Etupes,seloncourt and Arcey) had to face the facts on Monday evening. “No more orders for this evening,” he announced around 6:30 p.m. The thermometer in his truck then showed 61.3 degrees. A few minutes later, he decided to cancel his Tuesday service after reaching… 68.6 degrees!
No other solution
Record heat, a truck that necessarily heats up faster than a kitchen, as well as an oven that cooks “between 450 and 500 degrees”, the cocktail quickly became unbearable for Clément, who realized the obvious. It has already happened to shorten a service due to high heat, without reaching this level…
The pizza maker didn’t have many solutions. A fan ? “flour flies everywhere”. Make more drafts? “Pizza dough tends to crust over,” replies Clément Di Léo, who, we quickly understand, would rather cancel a service than skimp on quality.
He also interrupts our exchanges twice to take care of his pizza dough. His oven was “bought in Naples, it runs on gas and wood”, which allows him to adjust the temperature precisely. He creates his pizzas with handpicked ingredients with protected designation of origin, and makes his own original preparations, such as the pistachio cream.
His pizzas are also a feast for the eyes. “They all have a different color”, a nod to the name Colors Pizza. On the menu, there are “red margharita” (€9) or even a magic white (with smoked mozzarella and Italian raclette cheese). And each month, a new recipe (a little more expensive) that is worth the detour. We’ll let you salivate over the July pizza: truffle cream, mozzarella, mushrooms, buffalo burrata, truffle carpaccio, hazelnuts and basil.
